I wanted to make post about the baking from the Ball. We had lots of things to serve...

Plus the shortbread cookies and walnut brownies my mother sent!
All of these recipes are posted here, including notes such as "don't bother making these" or "there were great!." A lot of the recipes are from places like Joy of Baking, but some are from my family or other sources.
Snickerdoodles
1 cup butter
1 cup sugar
2 eggs
2 3/4 cups flour
2 tsp cream of tartar
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla
sugar and cinnamon for rolling
Method:
Cream butter and sugar. Add eggs. Mix flour, tartar, salt, and soda. Combine flour and butter mixtures. Roll dough into 1 inch balls and roll in cinnamon sugar mixture (1 cinn:3sugar). Flatten cookies on a greased cookie sheet and bake at 350 for 12- 15 min.
Carrot Cake
3/4 pound raw carrots, grated (about 2 1/2 cups)
2 cups flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
4 eggs
1 1/2 cups sugar
1 cup vegetable oil
2 tsp vanilla
Method:
Mix oil, eggs, sugar, and vanilla. Mix flour, powder, soda, salt, and cinnamon. Combine wet and dry ingredients. Fold in carrots. Bake in greased cake pan (bunt cake) for 20-30 min at 350.
(I frosted it with a coconut frosting, using coconut milk, powdered sugar, vanilla, and coconut flakes)
Vegan Ginger Snaps
2 1/2 cups flour
2 1/4 tsp baking soda
1/2 tsp salt
1 tbs ginger
1/2 tsp all spice
3/4 cup butter (vegan)
1/2 cup brown sugar
1/2 cup sugar
4 tbs molasses
1 egg (3 tbs water + 1 tbs ground flax seed)
Method: Cream butter, sugars, molasses and 'egg' together. Mix flour, soda, salt, ginger, and all spice. Combine wet and dry. Make into flat disc cookies and place on greased cookie sheer. Bake for 20 min at 350.
I made each recipe by at least x3. But some of them were made by x4 or x5- like chocolate chip cookies, peanut butter cookies, blueberry crumble cake, no bakes etc. All of that resulted in two long tables very full of baked goods- and (I think) lots of happy mouths at the Ball.
